    • 2tbsp Cornflour

    • Add the cornflour-milk mixture, whisk well, and simmer for 3 minutes over medium heat, stirring constantly. Allow cooling completely before serving.
    • Mix in the black Jamun pulp and sugar substitute once it has cooled.
    • Fill a shallow aluminium container halfway with the mixture. Freeze for 6 hours or until semi-set, covered in aluminium foil.
    • Fill a mixer halfway with the contents and blend until smooth.
    • Return the mixture to the same shallow aluminium container. Cover with aluminium foil and place in the freezer for ten hours.

    Additional tips

    • Fresh cream with a fat content of 35-40% will give you the greatest results. If you just have access to 25% fat fresh cream, which is widely accessible in India, it will suffice. I used 25% fat cream in this recipe, and it turned out great.
    • If your whipping cream already has sugar added to it, you can forgo adding sugar because the cream will provide enough sweetness.
    • The smoother the texture of the finished product, the lower the amount of water crystals in the ice cream after freezing, the higher the fat content in the cream.
    • Applying cling film to the ice cream mixture before freezing in an airtight container will also help reduce water crystals.
