Vegetable Salad Ingredients
- 2 medium carrots
- 2 medium cucumber
- 1 small white Indian radish
- 1 large-sized tomato
- 2- 3 spring onions
- 1 or 2 tbsp pumpkin seeds
- 1 tbsp roasted sunflower seeds
- ½ tbsp sesame seeds
- 1 tbsp chopped cashews or whole cashews
- 1 tbsp chopped almonds (optional)
- 1 tbsp chopped pistachios
- 1 tbsp walnuts
Vegetable Salad Dressing
- ½ or 1 tbsp extra virgin olive oil
- ½ or 1 tsp lemon juice
- 3- 4 chopped fresh Italian basil
- Herbs as required
- 1 tsp finely chopped celery
- Salt as required
- Pepper as required
How to Prepare
Chop the large-sized tomatoes and finely chop the spring onions. Keep all the veggies in a bowl.
Now heat a pan and dry roast all the seeds and nuts until crisp and lightly browned. Keep it aside.
For the dressing, take a small bowl, whisk all the ingredients well. Now pour the dressing into the bowl containing vegetables.
Toss it well so that the veggies are coated with the dressing. Sprinkle the roasted seeds and dry fruits on it.
Serve the super healthy vegetable salad immediately.
