The corn salad recipe is an easy, tasty, and healthy recipe of salad made with sweet corn, onion, cucumber, spices, and herbs. Also, it’s Gluten-free and vegan.

It is so hot in these certain months and the kitchen, it even becomes hotter. We try to keep our cooking easy and not complex during the summer months.
Most salads can be had as a light meal or as a brunch. For some carbs, you can have this along with a few slices of toast. This salad is made with different combinations of spices and adding various veggies. Carrots, beetroots can go very well. Even tomatoes can be added along with cucumber and onions.
We have used fresh sweet corn. Though even canned corn can be used. But suggested fresh corn should be used as the taste of salad is better with fresh corn.
Ingredients:
- 2 medium-sized corn cobs or 400 grams corn cobs
- ¼ cup finely chopped onion
- ½ cup diced tomato

- ½ cup diced green bell pepper
- ¼ tsp red chili powder or black pepper
- ¼ tsp roasted cumin powder
- 1 tbsp chopped coriander leaves or ½ tbsp chopped parsley
- 3 tbsp olive oil
- 1 tsp lemon juice, as per taste
- Salt as needed
How to Prepare:
Boiling Corn
First, boil or steam fresh 2 medium corn cobs until the kernels are soft. You can steam them in a steamer, pressure cooker, or electric cooker. Here, it is cooked in a pressure cooker in 1.5 cups of water for 5 whistles.
You can also boil them in a pan. Just add the corn cobs and water to a pan. Cover and boil it until the corn kernels become soft. You can add more water if needed while cooking.
Let the corn cobs cool down. Then delicately scrape off the corn kernels with a knife.
Making Corn Salad
- Put the corn kernels into a mixing bowl.
- Add ¼ cup finely chopped onion, ½ cup diced tomato, green bell pepper and 1 tbsp chopped coriander or ½ tbsp chopped parsley.

- Sprinkle ¼ tsp red chili powder or black pepper and ¼ tsp roasted cumin powder and salt as required.
- Now add olive oil and 1 tsp lemon juice. You can add lemon juice as per your taste preferences.
- Mix and toss everything so well.
- Serve sweet corn salad quickly. Also, you can chill in the fridge and serve later.
- You can add your own choice of veggies, spices, and herbs when you make this salad. A lot of meal experiments are possible in this recipe.
